Oatmeal Raisin Cookies

Lets get into this right away.
First and foremost for this recipe - Don't forget to take you butter out of the fridge beforehand, so it's near room temperature, or you can choose one of my quick methods to softening butter. And the best thing about cookies in general is that they only take minutes in the oven!
Behold my Honey Oatmeal Raisin Cookies!


Honey Oatmeal Raisin Cookies
Makes 7-9 cookies
  
50g butter, room temperature
50g caster sugar
2 Tbsp honey
1 egg
1 tsp heaped cinnamon powder
50g wholemeal flour (or plain/ all-purpose flour if you're at a loss)
1tsp baking powder
80g porridge oats
30g raisins
20g sunflower seeds

Heat oven to 180°C/ 350°F. Grease a large baking sheet. In a large bowl, cream the butter and sugar together until light and fluffy, then beat in the honey.

Add the egg and cinnamon powder and mix well. In another bowl, combine the flour, baking powder and oats before adding to the butter mixture.

Fold in the Raisins and Sunflower seeds into the mixture.

Drop heaped tablespoonfuls of the cookie dough onto the baking sheet and bake for 10-12 minutes or until lightly golden. Keep an eye on them as they go brown quickly!

Remove them from the oven and leave them on the tray for 10 minutes to harden before transferring them to a cooling tray to completely cool (this bit is important).
